The Galesburg Community Foundation recently showered praise on the Knox Prairie Community Kitchen (KCPK).
"Knox Prairie Community Kitchen is adjusting and innovating to continue serving our region," the Foundation said in a post on Facebook.
On July 9, the Kitchen adapted to the COVID-19 pandemic as it provided curbside pickup for the free spaghetti dinners they were giving away. “If arriving by vehicle, we ask that you please remain there and wait for a volunteer to assist you,” the Kitchen said on its Facebook post. “Please also wait on the north side of the street only—for safety, we can't cross traffic to serve you.”
The Kitchen was founded in 2011 out of The Lunch Spot, which provided free lunches to students and families in Galesburg Community District 205 over the winter break. “Recognizing a hunger insecurity issue in the community, the KPCK began addressing this with a series of free potluck dinners,” the Kitchen said on Facebook. KPCK serves two meals monthly, and all meals are served in a dignified and friendly climate to everyone, regardless of need.
